Hey Kids, it’s Mothers Day Soon!

Hey Kids (or should I say “the man who made her a mother”?), its Mothers Day on Sunday. That’s right only 4 days away and you know what that means? Breakfast in bed, a day of rest and, being waited on. 

Your Mum is always there for you. She is the person you turn to when you have good news or when you need a pick-me-up. Mums are an invaluable part of our lives and they have dedicated themselves to keeping us happy and healthy, every day.

This year Mother’s Day will be a little different for everyone, however, someone as special as your Mum deserves a special day. Here are a few ways you can spoil your Mum at home this Mother’s Day.

  • Pack the picnic basket and set up lunch for Mum in your own backyard
  • Let Mum sleep in and make her breakfast in bed
  • Take at home family portraits using your phone, to capture memories of your family and Mums’ best Mother’s Day yet!
  • Make your Mum her favourite dinner (AND CLEAN UP THE MESS)
  • Make your Mum a homemade card or gift from the heart

Here are a few breakfast recipe specialities:

Bircher Muesli

  • ¼ cup oats
  • a teaspoon of chia
  • enough orange or apple juice to saturate the oats
  • a couple of tablespoons of full fat greek yoghurt or vanilla yoghurt 
  • a couple of chopped dates or 1 tablespoon of craisins
  • a whole grated apple
  • sprinkle of cinnamon to taste
  • a tablespoon of cream
  • a tablespoon of slivered almonds
  • honey or maple syrup

Mix all ingredients, except almonds, together in a bowl, cover and refrigerate overnight. In the morning check consistency, the muesli may need loosening with a little milk.  Spoon into a pretty bowl and top with slivered almonds and a drizzle of honey or maple syrup.

Best Breakfast Pancakes

Servings: 6-8 large pancakes

Ingredients

  • 1 cup all-purpose flour, spooned into measuring cup and leveled-off with back edge of knife
  • 2 teaspoons baking powder
  • 2 tablespoons sugar
  • 1/2 teaspoon salt
  • 1 large egg
  • 3/4 cup plus 2 tablespoons milk
  • 2 tablespoons unsalted butter, melted and slightly cooled
  • Vegetable oil, for cooking

Instructions

Combine the flour, baking powder, sugar and salt in a bowl and mix well.

Beat the egg and milk together in a bowl. In a different bowl, add the milk mixture to the melted butter, stirring constantly with a whisk to blend.

Pour the milk mixture into the dry ingredients and stir just enough to moisten the flour mixture. It should look a little lumpy. (If you overwork the mixture, the pancakes will be tough.) This is a thick batter but if it seems too thick, add a bit more milk.

Heat a griddle or nonstick pan over medium heat and coat it with vegetable oil. Drop the batter from a large spoon (about 1/4 cup) and cook until the first side is golden brown, or until the top surface bubbles and is dotted with holes. Flip and cook until the other side is golden brown. This happens quickly so peek after 30 seconds and watch carefully! Adjust the heat setting if necessary. Wipe the griddle totally clean with a paper towel between batches. Serve immediately.
